The Pinot Noir and Chardonnay grapes used to make the 2004 Lake Sonoma Brut were grown in the cooler portions of the Russian River Valley. These vineyards give us fruit with beautiful natural acidity and bright fruit, perfect for sparkling wine production. The grapes are gently whole-cluster pressed, without crushing. The resulting cuvee wines are very delicate, with bright fruit aromas and crisp flavors.

We follow the traditional “Methode Champenoise” practice of secondary bottle fermentation and aging on the yeast to produce the mousse, or bubbles.
The creamy, medium-dry style of the Lake Sonoma Brut is perfect as a aperitif, or with salads using apple, berries or citrus. Grilled prawns or fresh oysters are also a wonderful pairing with the cuvee.
